There is something to be said for a nice hit of umami.
I have a habit of collecting canned fish when I see them on sale. They have a nice way of making a meal when it’s really hot, like it is right now. This is easy—no cooking involved, aside from using your toaster.
I highly recommend using good quality sardines, just because the flavor hit is worth it. Fresh sourdough is helpful, too.

Sardine Toast for Two
Ingredients
- 4 slices of sourdough bread
- 1 garlic clove, cut in half
- Salted butter
- 1 large heirloom tomato
- 1 can of sardines
- ¼ red onion
- Extra virgin olive oil to drizzle
- Sea salt to taste and ground pepper to taste
- Basil leaves for garnish
Toast the bread and rub with the cut half of a clove of garlic while the toast is still warm, then butter the bread.
Layer on a few slices of thinly sliced tomato, then lightly salt.
Next, add sardines and red onion. If your sardines are packed in olive oil, you likely won’t need to add more. Top with basil leaves and enjoy the umami!
