Roasted Pears with Chèvre

I love roasted fruit for dessert! This is an easy sheet pan recipe that makes the most of Autumnal flavors, but be sure to use firm pears so that they don’t get mushy. If you’d like this a little sweeter, you can top the dish with candied pecans.

Ingredients

  • 2 Bosc or other firm pear
  • 2 tsp oil for brushing (I used walnut)
  • ¼ cup maple syrup
  • 2-3 oz Chèvre cheese
  • chopped pecans to finish

Line a sheet pan with aluminum foil for easy cleanup. 

Preheat oven to 400º F.

Cut the pears in half lengthwise, then scoop out the seeds with a melon baller or small spoon. 

Brush oil on the cut side of the pears and lay them on the sheet pan. Pinch off a good-sized ball of Chèvre and fit it into the cavity of the pears, then drizzle the entire top side of the pear with maple syrup.

Roast for 30 minutes or until the pears soften and the cheese gets golden around the edges. 

Remove from oven and plate. Sprinkle with the pecans and serve. 

Serve 2-4.
